Make Lollipops Using Cinnamon Sticks

Making your own lollipops is a lot easier than you’d think. In this blog we show you how to use cinnamon sticks as the stems for cute little DIY lollipops, which can be stirred into hot tea or cider.

A great way to wow guests, these cinnamon stick lollipops would be a great addition to tea or dinner parties.

Makes 30

Ingredients

11/2 cups (330 g) sugar
3/4 cup (185 ml) water
2/3 cup (160 ml) corn syrup
1/2 teaspoon cream of tartar
1/2 teaspoon cinnamon oil
30 cinnamon sticks (12.5 cm/ 5 inches long)

Step 1

Using a pencil, draw ten 5 cm (2 inch) ovals on three sheets of baking (parchment) paper. Place paper, marked side down, on baking trays (baking sheets); chill trays until ready to use.

Step 2

In a large heavy saucepan, cook and stir the sugar, water, corn syrup and cream of tartar over medium heat, until sugar is dissolved. Bring to a boil. Cook, without stirring, until a sugar (candy) thermometer reads 163ºC (325°F) or mixture is a golden amber colour.

Step 3

Remove from heat; stir in oil (keep your face away from mixture, as oil is very strong). Immediately spoon mixture over ovals; press a cinnamon stick into each. Let cool. Store in an airtight container for up to 1 month.
