Asparagus And Ham Grill

Asparagus is an extremely healthy and delicious vegetable that can be used in a variety of dishes. This recipe for an Asparagus and Ham Grill is quick and easy to make and a great dish to make with leftovers.

Ingredients

12 asparagus spears
4 large slices cooked ham, about 150g
150g low-fat ricotta or low-fat cream cheese
1 teaspoon cornflour
150g parmesan
3 tablespoons milk
2 tablespoons snipped fresh chives

Step 1.

Trim the woody ends off the asparagus and lay the spears in a large frying pan. Add just enough boiling water to cover, then bring back to the boil over high heat. Reduce the heat, cover the pan and simmer for 5 minutes or until the spears are just tender.

Step 2.

Meanwhile, lay the ham slices on a cutting board. Preheat the grill to medium-high and have a large ovenproof dish or four gratin dishes ready. In a bowl, mix the ricotta or low-fat cream cheese and cornflour. Finely grate the parmesan, reserving 1 tablespoon, then stir the remainder into the cheese mixture. Whisk in the milk.

Step 3.

Drain the asparagus and lay three spears over each slice of ham. Roll up and place in the prepared dish or individual dishes. Spoon
the cheese mixture over the ham and sprinkle with the reserved parmesan. Cover any protruding asparagus tips with foil.

Step 4.

Grill the asparagus and ham rolls for 5 minutes or until the cheese topping is bubbling and browned. Sprinkle over the snipped chives before serving.
